Egusi Soup Recipe

  • 1 cup of ground Egusi seeds
  • 1/4 cup of roasted crayfish (ground)
  • Assorted meats and fish (optional)
  • 1/4 cup of palm oil
  • 1 onion (finely chopped)
  • 2 cups of vegetable stock or water
  • 1 handful of ugu leaves or spinach
  • 1 tablespoon of ground chili pepper
  • Salt to taste
  • Seasoning cubes (optional)
  • Heat the palm oil in a pot and sauté the onions until translucent.

  • Add the ground Egusi seeds and stir to fry for 5–7 minutes.
    3. Gradually add the stock while stirring to form a smooth consistency.

  •  Add the meats, crayfish, chili pepper, and seasoning cubes. Let it cook for 15–20 minutes.

  • Stir in the ugu leaves or spinach and simmer for another 5 minutes.

  • Serve with pounded yam, fufu, or eba.
