Egusi Soup Recipe

- 1 cup of ground Egusi seeds
- 1/4 cup of roasted crayfish (ground)
- Assorted meats and fish (optional)
- 1/4 cup of palm oil
- 1 onion (finely chopped)
- 2 cups of vegetable stock or water
- 1 handful of ugu leaves or spinach
- 1 tablespoon of ground chili pepper
- Salt to taste
- Seasoning cubes (optional)

Heat the palm oil in a pot and sauté the onions until translucent.
Add the ground Egusi seeds and stir to fry for 5–7 minutes.
3. Gradually add the stock while stirring to form a smooth consistency.Add the meats, crayfish, chili pepper, and seasoning cubes. Let it cook for 15–20 minutes.
Stir in the ugu leaves or spinach and simmer for another 5 minutes.
Serve with pounded yam, fufu, or eba.
